Ingredients

  • Smoked Salmon: 50g, sliced
  • Spinach Leaves: 1 cup, fresh
  • Pomegranate Seeds: 2 tablespoons
  • Mixed Coloured Grape Tomatoes: 1 cup, halved
  • Pear: 1 small, thinly sliced (about 4 slices)
  • Mixed Beans: 1 mini can, drained and rinsed
  • Dressing:
    • Flaxseed Oil: 1 tablespoon
    • Lemon Juice: 1 teaspoon
    • Salt: to taste
    • Black Pepper: to taste

Instructions

  1. Preparation of Ingredients:
    • Rinse the spinach leaves, pear slices, and grape tomatoes under cold water to remove any impurities.
    • Drain and rinse the mixed beans in a colander to eliminate excess sodium and starch, which is beneficial for weight management and insulin sensitivity.
    • Halve the grape tomatoes and set aside.
    • Thinly slice the pear, using only a couple of slices.
    • If desired, briefly heat the smoked salmon in a pan for a minute to enhance its colour and flavour, although this step is optional.
  2. Dressing Preparation:
    • In a small bowl, combine the flaxseed oil, lemon juice, salt, and black pepper. Whisk until well blended.
  3. Salad Assembly:
    • Begin by placing the spinach leaves at the base of a serving bowl.
    • Artfully arrange the halved grape tomatoes on one side of the bowl.
    • Add the rinsed mixed beans in the centre and position the pomegranate seeds on the opposite side.
    • Arrange the pear slices symmetrically on both sides of the bowl.
    • Finally, drape the smoked salmon over the spinach leaves.
  4. Finishing Touch:
    • Drizzle the prepared dressing over the salad just before serving.
