As Christmas 2025 approaches, our family finds itself sprinkled across different corners of the world. Coming from a family of five, we’ve learned that gathering together every single year isn’t always possible—but that doesn’t make the season any less special. This year, my sister and I decided to create our own little moment of Christmas magic with a last-minute dinner before we head off on our festive travels.

Instead of diving straight into indulgence, we chose a light, nourishing menu—something to gently reset the body before the inevitable Christmas feasts, treats, and celebrations ahead. Think fresh flavours, wholesome ingredients, and a cozy table filled with laughter and holiday cheer.

Here’s what we served for our pre-Christmas dinner:


🥗 Entrée: Fresh Greek Salad

A crisp and colourful start to the evening, perfect for cleansing and refreshing.

  • Cos lettuce
  • Cucumber
  • Red onion
  • Cherry tomatoes
  • Feta cheese

Dressing: A simple drizzle of olive oil or fresh lemon juice with cracked black pepper—clean, light, and delicious.


🐟 Main Course: Grilled Salmon & Roasted Comfort

Our mains brought warmth to the table while keeping things beautifully balanced.

  • Grilled salmon
  • Oven-roasted pumpkin tossed with olive oil and fragrant rosemary
  • Creamy mashed sweet potato with a festive twist

🍠 Festive Sweet Potato Mash (Oven-Baked Finish)

Ingredients:

  • Sweet potatoes
  • Garlic
  • Onion
  • Fresh thyme
  • Salt and pepper
  • Parmesan cheese
  • Gluten-free crumbs (or ground flaxseed for an even healthier option)
  • 4 tablespoons milk of your choice
  • A small knob of salted butter

Method:
Boil the sweet potatoes in lightly salted water until tender, then drain and mash with a fork.
In a pan, sauté onion, garlic, and thyme in olive oil until golden and fragrant. Add the mashed potatoes, butter, and milk, mixing gently and warming for about one minute.

Transfer the mash to an oven-proof dish, sprinkle with parmesan and crumbs, and bake at 150°C for around 10 minutes—just enough to create a light golden topping.


🥥 Dessert: Coconut Sago with Tropical Cheer

To finish, we served a light and comforting dessert inspired by the Pacific and Southeast Asia.

Sago, small translucent pearls, are gently cooked and paired with:

  • Coconut cream
  • Shredded coconut
  • Fresh mango pieces for natural sweetness

Sago is gluten-free and rich in carbohydrates, making it a great energy booster. It supports digestive health and contributes to heart, bone, skin, and hair health—perfect for a feel-good festive dessert.

  • 150g smoked salmon
  • 1 fennel bulb, thinly sliced (lightly sautéed with garlic and salt)
  • 4 radishes, thinly sliced
  • Small fresh herbs (for decoration)
  • 1 red capsicum, lightly sautéed in oil to soften
  • Optional: Roasted tomatoes
  • Christmas crackers
  • Lemon juice, salt, pepper, and flaxseed or olive oil

Note: Feel free to add your personal touch to enhance the visual appeal and flavor.

Method:

  1. Begin by mashing the ripe avocado and spreading it in a circular shape on a large round plate, leaving a small hole in the center.
  2. Drizzle the mashed avocado with a bit of lemon juice, followed by a pinch of salt and pepper.
  3. Layer the smoked salmon pieces on top of the avocado.
  4. Add the sautéed fennel over the salmon.
  5. Place the softened red capsicum or optional roasted tomatoes around the wreath for a vibrant, colorful look.
